The Lardo Cream from La Bottega di Adò is made by finely grinding aged lardo in marble basins, resulting in a soft, velvety, and non-greasy spread. It has a delicate, subtly spiced aroma, a white color, and a sweet, moderately savory taste. The distinctive quality of this cream comes from the skill and experience of artisanal pork butchers, but above all from the careful selection of pork used: all come from the Gran Suino Padano DOP supply chain, known for mature, firm, compact, and flavorful meat. The lardo is sourced from pigs born, raised, and produced in Emilia-Romagna, Lombardy, Veneto, Friuli Venezia Giulia, and Piedmont.
