Peeled Tomatoes
Peeled tomatoes are ripe tomatoes that have had their skin removed and are preserved whole in their own juice or in purée. They have a rich, sweet, and mildly acidic flavor, making them ideal for sauces, pizza, and long-cooked dishes.
They are usually made from firm, low-seed tomato varieties, especially San Marzano (the most famous variety for peeled tomatoes), as well as other similar types grown for the canning industry, chosen specifically because they retain their structure and flavor after peeling and preservation.
In the kitchen, they are a “serious” base ingredient: no frills, just results.
