Gorgonzola cheese DOP Spicy Tosi – Artisan Cheese
Discover Tosi Spicy Gorgonzola, a DOP Gorgonzola handcrafted by Caseificio Tosi in Piedmont. This spicy version stands out for its aging of at least 90 days, resulting in a creamy yet firm texture, pronounced blue-green veins, and an intense, savory, pleasantly spicy flavor, balanced by milky and ripe fruit notes.
Key Features
Milk: Pasteurized cow’s milk from the DOP production area (Piedmont/Lombardy).
Rind: Rough, pinkish/gray.
Paste: Creamy white with widespread blue-green veining, firmer than the sweet version.
Flavor: Bold and spicy, with appealing veining that is present but not overwhelming.
Perfect on a cheese board with white or dessert wines, in sauces for pasta or gnocchi, risottos, or creamy meat dishes. Pairs beautifully with pears, figs, or honey to enhance its spiciness. Store in the fridge at 4–6°C and consume within a few days of opening.
Why Choose It?
Artisan-made since 1975, Caseificio Tosi uses traditional methods such as hand salting and aging on wooden boards for an authentic, high-quality spicy Gorgonzola. Ideal for your gourmet creations!
History of Caseificio Tosi
Founded in the 1960s by Santino Tosi with a focus on high-quality cheeses, in the 1980s his son Fabrizio elevated Gorgonzola to a family legend. In the 1990s, with Miranda and Andrea, the company achieved excellence within the Gorgonzola DOP Consortium.
Artisan Production
In the heart of Lake Maggiore and Lake Orta, the dairy transforms excellent milk into 300 wheels per day. Each wheel is carefully hand-aged 90–160 days on wooden boards, treated like a member of the family.
