Prescinsöa (or prescinscoa) is a fresh cheese typical of Liguria, sitting somewhere between yogurt and ricotta. It has a creamy, slightly grainy texture, with a delicate flavor and a distinctive mild tanginess.

In Ligurian cuisine it is very versatile:
