Gnocchi with Pesto and Green Beans | Pesto песто ™

Ingredienti:

Servings: 2 people | Preparation time: 1 hour

  • Gnocchi: 250 g
  • Green beans: 80 g
  • Pesto песто: 100 g

For the homemade Gnocchi:

  • Old potatoes: 1 kg
  • Flour: 250 g
  • Egg: 1 (optional)
  • Salt: to taste
  • Pepper: to taste
  • Nutmeg: to taste

Preparation:

  1. Boil the potatoes
    Place the whole potatoes in a pot with cold salted water.
    Cook until soft (about 30 minutes).
    Peel the potatoes while still warm and pass them through a potato ricer onto a floured surface.

  2. Knead the dough
    Gradually add the flour, the egg (if used), a pinch of salt, pepper, and nutmeg.
    Knead quickly until you obtain a homogeneous dough.

  3. Form the cylinders
    Divide the dough into pieces about 2 cm thick.
    Form long cylinders with a diameter of 2 cm.

  4. Create the Gnocchi
    Cut the cylinders into small pieces about 2 cm long.
    Roll each piece on a fork or a ridged board to give it the typical shape.

  5. Green Beans
    Boil the green beans in boiling salted water for about 3 minutes.
    Drain and set aside.

Assembly:

  1. Cook the Gnocchi
    Cook the gnocchi in plenty of boiling salted water.
    Drain when they all float to the surface (about 2-3 minutes).
  2. Toss
    In a large bowl, combine the drained gnocchi, green beans, and pesto.
    Add a ladle of cooking water to bind everything together.
    Gently mix and serve immediately
