From the heart of the Genoese hinterland comes la prescinsöa (prescinsêua), a curd made from whole milk that transforms into a creamy cheese with a tangy and lively flavor. This unique product highlights the taste of traditional dishes such as focaccia with cheese and vegetable tarts.

The Crescenza or Stracchino

Our artisanal ricotta differs from industrial production in its natural white color, with more pronounced creamy nuances in the summer. Unhomogenized, it has a slightly denser consistency, reminiscent of traditional recipes from old farms.

Salty aged Ricotta - Sarazzu

A symbol of Aveto’s rural culture, ricotta is salted and left to mature for at least 7 days to preserve it for longer. Its intense flavor is also an excellent addition to classic polenta dishes from the Ligurian hinterland.

San Stè ® 3 maturations/ages

Produced in the heart of Val d’Aveto with whole raw milk, San Stè ® is a semi-hard cheese offered in three stages of maturation. The young one, aged for 60 days, has a fresh and delicate flavor; the medium maturation develops more complex aromas over 4 months; the extra, with 8 months of aging, acquires an intense and characteristic taste.

Fontaveto

Fontaveto is a pleasant rediscovery of a classic national soft cheese. It stands out for its straw-yellow color and its sweet and delicate flavor. Perfect as a second course, it melts easily, making it an ideal ingredient for enriching numerous recipes.

Caciotta with Genoese Pesto

From the processing of pasteurized whole milk and selected lactic ferments comes our fresh caciottina with pesto. Its golden interior, enlivened by emerald green specks, offers a flavor balance between the delicacy of the cheese and the aromatic intensity of the pesto. Its soft and pleasant consistency makes it versatile both raw and melted.
