Italian tramezzino in Sofia: why we brought it here
The story and culture of the Italian tramezzino, why ingredients matter, and why you will find it at Pesto Store Sofia like in a real Italian bar.
In Italy, almost every proper bar has a glass case of tramezzini. Soft crustless bread, a generous filling, a coffee or a spritz – that is everyday Italian culture, not a tourist gimmick.
What a tramezzino really is
A tramezzino is a triangular sandwich of soft white milk bread with the crust removed. It was born in Northern Italian bars – Venice and Trieste above all – as a snack you eat standing up, with one hand. It is not a baguette, not a burger, not a generic sandwich: the bread must stay soft, the filling must be serious.

Why ingredients matter
There is nowhere to hide. If the cured meat is average, or the mayo is anonymous, you taste it immediately. That is why at Pesto Store we treat tramezzini like our pizza: Italian ingredients, prepared fresh – Prosciutto di Parma aged 22 months, smoked salmon, tuna with egg, grilled aubergine – the same standard we use in the kitchen and on our shelves.

Italian culture in a snack
The tramezzino is lunch between appointments, a bite before the train, aperitivo with friends. It is how Italy eats when it does not sit down for a full meal – simple, social, and proud of the product inside.

Why we brought it to Sofia
Sofia already had pizza and sandwiches. What was missing was this bar culture: a real Italian tramezzino you can take away with the same honesty as at home. So we brought it here – not as a copy-paste trend, but as part of how we want Italian food to feel at Ekzarh Yosif 9A: pizza, focaccia, deli… and tramezzini.

Why did you bring tramezzini to Sofia?
In Italy almost every proper bar has tramezzini. In Sofia you could find pizza and generic sandwiches, but this piece of Italian takeaway culture was missing. We brought it with the same standard as our pizza: Italian ingredients, no shortcuts.
Which tramezzini do you serve at Pesto Store?
Four fillings: Crudo (22-month Prosciutto di Parma), Vegetarian (grilled aubergine), Tuna (with egg) and smoked Norwegian salmon - with Philadelphia, Calve mayo, pink tomato and rocket where listed.
Why do ingredients matter so much?
A tramezzino is simple: if the bread or filling is average, you notice immediately. That is why we use Italian cured meats and bases and prepare them fresh - the same approach as our kitchen and shop.
