The salami is dried over a wood fire and then aged in the ancient cellars of the Cabella family.<\/p>\n<p data-start=\"289\" data-end=\"410\">When sliced, <strong data-start=\"302\" data-end=\"325\">Sant\u2019Olcese Salami\u00ae<\/strong> reveals a fragrant aroma and a delicate flavor enhanced by a light hint of garlic.<\/p>\n<hr data-start=\"412\" data-end=\"415\" \/>\n<h3 data-start=\"417\" data-end=\"455\"><strong data-start=\"421\" data-end=\"455\">History of Sant\u2019Olcese Salami\u00ae<\/strong><\/h3>\n<p data-start=\"457\" data-end=\"896\">There are no certainties regarding the historical origins of Sant\u2019Olcese Salami\u00ae, but it undoubtedly dates back before the 19th century.<br data-start=\"593\" data-end=\"596\" \/>Tracing the genealogy of the <strong data-start=\"625\" data-end=\"643\">Cabella family<\/strong>, one easily crosses the threshold of 1800, entering the industrial era.<br data-start=\"715\" data-end=\"718\" \/>It was during that century that Sant\u2019Olcese Salami\u00ae conquered the Genoese market \u2014 evolving from a local product of the Polcevera Valley to a beloved staple of Genoese cuisine.<\/p>\n<p data-start=\"898\" data-end=\"1154\">By the early 1900s, the <strong data-start=\"922\" data-end=\"945\">Cabella Salumificio<\/strong> was already expanding beyond the nearby valleys (Valle Scrivia, Val Bisagno, Valle Stura, and Valle Polcevera itself), reaching also the lower Piedmont areas that supplied excellent beef to local producers.<\/p>\n<hr data-start=\"1156\" data-end=\"1159\" \/>\n<h3 data-start=\"1161\" data-end=\"1202\"><strong data-start=\"1165\" data-end=\"1202\">Production of Sant\u2019Olcese Salami\u00ae<\/strong><\/h3>\n<p data-start=\"1204\" data-end=\"1439\">What most distinguishes this product is its <strong data-start=\"1248\" data-end=\"1281\">unique blend of pork and beef<\/strong>, making it unlike any other cured meat.<br data-start=\"1321\" data-end=\"1324\" \/>The beef comes from adult animals raised in Piedmont, particularly in the <strong data-start=\"1398\" data-end=\"1430\">Asti, Alessandria, and Cuneo<\/strong> areas.<\/p>\n<p data-start=\"1441\" data-end=\"1639\">All the cattle slaughtered in Sant\u2019Olcese belong to the <strong data-start=\"1497\" data-end=\"1520\">\u201cBianca Piemontese\u201d<\/strong> and <strong data-start=\"1525\" data-end=\"1541\">\u201cBrunalpina\u201d<\/strong> breeds, meaning the meat originates exclusively from Liguria and the entire northwest of Italy.<\/p>\n<p data-start=\"1641\" data-end=\"1796\">The <strong data-start=\"1645\" data-end=\"1659\">pork parts<\/strong>, providing the fatty component of the mixture, come from both Piedmont and Emilia-Romagna, consisting mainly of <strong data-start=\"1772\" data-end=\"1793\">lard and pancetta<\/strong>.<\/p>\n<p data-start=\"1798\" data-end=\"2050\">Although production methods have evolved with modern technology, the <strong data-start=\"1867\" data-end=\"1897\">flavor and characteristics<\/strong> of the salami remain unchanged.
